Raspberry Mousse Gateau - La Creme style

Sian produced this cake yesterday for a customer and I think visually it is world class.

Its a raspberry mousse gateau decorated with fresh raspberries, chocolate pieces and the most vibrant raspberry gel.

What do you think?

No wonder Sian was voted one of the top three patissiers in the UK at last years British Bakery awards.
